Our client, Amntaj L.O Pty Ltd Trading as Cafe Greco (Watergardens), is seeking a qualified and experienced Chef to join its busy and dynamic kitchen team. Located in the heart of Watergardens Town Centre, Cafe Greco is a well-established and popular Mediterranean-inspired restaurant renowned for its extensive menu, quality food, relaxed dining atmosphere and excellent customer service.
The restaurant offers a diverse range of dishes including gyros, souvlaki, seafood platters, grilled meats, steaks, pasta, pizzas, salads and other Mediterranean favourites, catering to a broad customer base throughout lunch and dinner service.
The successful candidate will play a key role in maintaining Cafe Greco's reputation for delivering high-quality food and exceptional dining experiences. This position requires a motivated Chef who can work efficiently in a fast-paced environment while maintaining the highest standards of food quality, presentation, safety and kitchen operations.
Qualifications and Experience
-Relevant AQF Diploma, Advanced Diploma or Associate Degree in Commercial Cookery/Hospitality (ANZSCO Skill Level 2), or at least three years of relevant experience as a Chef in a commercial kitchen
-Ideally at least one year of recent full-time experience working as a Chef
-Strong knowledge of Mediterranean, Australian and contemporary café-style cuisine
-Sound understanding of food safety, HACCP and workplace health and safety requirements
Duties and Responsibilities
-Plan menus in consultation with management, considering seasonal ingredients, customer preferences and business objectives
-Prepare, cook and present high-quality meals in accordance with Cafe Greco's standards and recipes
-Estimate food and labour costs and assist with inventory control and stock ordering
-Monitor the quality of raw ingredients and finished dishes to ensure consistency and excellence
-Supervise food preparation and service to ensure meals are delivered efficiently during busy trading periods
-Discuss food preparation and operational matters with management and kitchen staff
-Train, mentor and supervise kitchen staff on cooking techniques, food presentation and workplace procedures
-Determine production schedules and staffing requirements to meet customer demand
-Inspect equipment, work areas and food storage facilities to ensure compliance with food safety standards
-Maintain strict adherence to food hygiene, sanitation and HACCP requirements
-Monitor portion control, minimise food wastage and contribute to cost-control initiatives
-Developing new menu items and specials that reflect Mediterranean and contemporary dining trends
-Coordinate purchasing activities and maintain appropriate stock levels of food supplies
-Demonstrate cooking techniques and the correct use of kitchen equipment to team members
Skills and Attributes
The successful candidate will possess:
-Strong culinary skills with experience preparing Mediterranean and contemporary Australian cuisine
-Ability to work effectively under pressure in a high-volume kitchen environment
-Excellent organisational and time management skills
-Strong leadership and team supervision capabilities
-Sound knowledge of food costing, stock control and waste minimisation practices
-Commitment to maintaining high standards of food quality, presentation and customer service
-Good understanding of WHS, food safety and HACCP requirements
