We are seeking a skilled and experienced Chef to join our team on a full-time permanent basis.
About the Role
The Chef will be responsible for preparing, cooking and presenting Ribs Lane’s menu items to a high standard. The role will involve planning and assisting with menu development, estimating food and labour costs, ordering food supplies, monitoring food quality, supervising kitchen operations, maintaining hygiene standards and supporting the consistent delivery of high-quality dishes during busy service periods.
Key Duties and Responsibilities
- Plan and assist with developing menus for ribs, grilled meats, burgers, wings, seafood, steaks, sides and other restaurant dishes;
- Estimate food and labour costs and assist with ordering food supplies, ingredients and kitchen stock;
- Prepare and cook menu items including ribs, grilled meats, burgers, chicken wings, seafood, steaks, sauces, sides and related dishes;
- Monitor the quality, flavour, portioning and presentation of dishes at all stages of preparation and service;
- Discuss food preparation, menu quality, service timing and kitchen issues with managers, kitchen staff and waiting staff;
- Demonstrate cooking techniques and provide guidance to kitchen staff on preparation, grilling, cooking, plating and presentation procedures;
- Ensure food is prepared safely, efficiently and consistently in line with restaurant standards;
- Supervise and support kitchen staff during preparation and service periods;
- Assist with selecting, training and guiding kitchen staff where required;
- Maintain cleanliness, hygiene and food safety standards across all kitchen areas;
- Explain and enforce hygiene, food handling, storage and workplace health and safety regulations;
- Monitor stock rotation, storage, wastage and preservation of food products;
- Freeze, store and preserve food items where required in accordance with food safety procedures.
Skills and Experience Required
- To be considered for this role, applicants must have:
- Certificate IV in Commercial Cookery or equivalent qualification;
- Minimum 2 years of relevant experience as a Chef or in a similar commercial kitchen role;
- Experience preparing and cooking grilled meats, ribs, burgers, seafood, steaks, wings, sides or similar casual dining dishes;
- Strong knowledge of food preparation, cooking techniques, portion control and presentation standards;
- Ability to work efficiently in a fast-paced restaurant kitchen environment;
- Experience with food costing, ordering, stock control and reducing wastage;
- Knowledge of food safety, hygiene, storage and workplace health and safety requirements;
- Ability to supervise, train and support kitchen staff;
- Strong communication, time management and organisational skills;
- Ability to work independently and as part of a kitchen team;
- Commitment to maintaining consistent food quality and high kitchen standards.
Salary: $80,000 per year plus 12% superannuation.
