Position Type: Full-Time
Salary: $75,000 to $95,000 plus superannuation per annum

Our client Mermaid Beach Surf Life Saving Club / Merlina's Restaurant is located right in the heart of the Gold Coast on Hedges Avenue and is looking for a qualified chef to join their team. The Surf Club at Mermaid offers premium customer service with amazing food, they have a history spanning more than 75 years and have won the most prestigious award “Australian Surf Club of The Year 2022”.
About You:
To join their team you will have a proven track record working in busy kitchens within a high volume casual dining environment. You will have experience with Western and South East Asian Cuisine and a proven track record delivering CONSISTENT high quality dishes without cutting corners. You will be creative and have a genuine passion for exceptional clean food. Have a positive attitude with a passion for cooking. A willingness to grow with the team and have good organization skills.
Your job duties will include, but not limited to, the following:
·Creation and preparation of any menu items as required
·Guarantee that food is consistently prepared to high standards
·Ensure all food items are produced within budgetary constraints
·Ensure hygiene standards are maintained at a sufficiently high level and an approved food safety plan is implemented.
·Monitor and maintain all kitchen equipment in correct operating order.
·Handle all customer complaints and patron care as required in a courteous, friendly manner.
·Informing potential issues with kitchen staff/GM regarding the prep/ordering/stock control/food safety and quality
·Assist all kitchen staff and General Manager as required.
·Guide / train / ensure correct documentation of new and old staff members in accordance with food and health and safety procedures and guidelines.
·Responsible for running of all aspects of the kitchen including kitchen cost control including menu costing / control of all pricing margins / staff costs / ordering/ reconciliation of ordering/ monthly counting and recording of stock takes
·Demonstrate sound teamwork / organisational skills
·Ensure compliance with workplace health and safety regulations and maintain a clean and organized work area.
Requirements:
·Certificate III and IV in Commercial Cookery is required or at least 3 years of working experience.
·Must have at least three (3) year of experience as a Chef
·Experience with Western and South East Asian Cuisine
·Cool under pressure and excited by a challenging fast paced environment
·To lead by example and be very hands on
·Strong level of attention to detail and consistency
·Ability to bring the best out of your team and apprentices
·Understanding of food safety standards and HACCP.
·Maintaining hygiene in the kitchen.
