GCFMC PTY LTD operates a well-established fresh meat business that has proudly served the local community for nearly 25 years. The company provides high-quality products including beef, lamb, chicken, pork, sausages, mince, smallgoods, and other specialty meats, maintaining a reputation for reliability and quality service.
The Butcher will be responsible for preparing a wide range of fresh meat products supplied by the business, including beef, lamb, chicken, pork, sausages, mince, smallgoods, and other specialty meat items.
Key Duties:
- Cutting, portioning and preparing different types of meat such as beef, lamb, chicken and pork according to retail and customer order requirements.
- Trimming fat, deboning carcasses and breaking down larger cuts into retail-ready portions for display and sale.
- Preparing a range of fresh meat products including mince, burger patties, sausages and other value-added items.
- Preparing marinated and seasoned meat products to meet customer demand and store product offerings.
- Producing sausages and smallgoods using appropriate equipment and preparation techniques.
- Using meat processing equipment such as meat slicers, mincers, grinders and mixers safely and efficiently.
- Preparing specialty items such as bones, offal and other cuts requested by customers.
- Ensuring meat products are properly stored, labelled and presented to maintain freshness and quality.
- Assisting with stock preparation and ensuring sufficient quantities of meat products are available for daily sales.
- Providing advice to customers on different meat cuts, portion sizes and suitable cooking methods.
Requirements:
- AQF Certificate III in Butchery (including at least two years of on-the-job training) or AQF Certificate IV, or at least three years of relevant work experience in place of formal qualifications.
- Previous experience working as a butcher or in a meat processing environment
- Ability to prepare and portion a wide range of meat products
- Knowledge of meat cuts and preparation techniques
- Ability to operate meat processing machinery safely
- Strong attention to detail and commitment to quality
- Good communication and customer service skills
