The Butcher will be responsible for preparing a wide range of fresh meat products supplied by the business, including beef, lamb, chicken, pork, sausages, mince, smallgoods, and other specialty meat items.

Key Duties:

  1. Cutting, portioning and preparing different types of meat such as beef, lamb, chicken and pork according to retail and customer order requirements.
  2. Trimming fat, deboning carcasses and breaking down larger cuts into retail-ready portions for display and sale.
  3. Preparing a range of fresh meat products including mince, burger patties, sausages and other value-added items.
  4. Preparing marinated and seasoned meat products to meet customer demand and store product offerings.
  5. Producing sausages and smallgoods using appropriate equipment and preparation techniques.
  6. Using meat processing equipment such as meat slicers, mincers, grinders and mixers safely and efficiently.
  7. Preparing specialty items such as bones, offal and other cuts requested by customers.
  8. Ensuring meat products are properly stored, labelled and presented to maintain freshness and quality.
  9. Assisting with stock preparation and ensuring sufficient quantities of meat products are available for daily sales.
  10. Providing advice to customers on different meat cuts, portion sizes and suitable cooking methods.

Requirements:

  1. AQF Certificate III in Butchery (including at least two years of on-the-job training) or AQF Certificate IV, or at least three years of relevant work experience in place of formal qualifications.
  2. Previous experience working as a butcher or in a meat processing environment
  3. Ability to prepare and portion a wide range of meat products
  4. Knowledge of meat cuts and preparation techniques
  5. Ability to operate meat processing machinery safely
  6. Strong attention to detail and commitment to quality
  7. Good communication and customer service skills
